Biryani has a variety of options ranging from vegetarian to non-vegetarian. But Hyderabad vegetarian biryani is a royal food brought to India by the Mughal-Nawab family in Hyderabad.
The word Biryani comes from the Persian words Birian, meaning fried before cooking, and Birinj, meaning rice.

Ingredients
For marinating:
1 cup curd 2 tsp ginger-garlic paste 2 chillies, chopped 2 tsp lemon juice 2 tsp oil ½ tsp turmeric 1 tsp chilli powder 1 tsp coriander powder 2 tsp garam masala 1 tsp salt 2 potatoes, cubed 5 beans, chopped 1 carrot, chopped 3 tsp peas 10 mushrooms, chopped 3 tsp chopped mint 3 tsp chopped coriander
For the rice:
2 cups basmati riceWater to soak and boil3 chilies, cut into strips2 teaspoons cilantro, chopped2 teaspoons mint, chopped2 teaspoons salt2 teaspoons lemon juice1 teaspoon ghee
For biryani:
2 tsp ghee2 tsp oil1 onion, sliced1 bell pepper, dicedFried onion½ cup saffron milk1 tsp masala for biryani2 tsp ghee
Instruction
How to marinate vegetables for biryani:
- Firstly, in a bowl take 1 cup curd, 2 tbsp ginger garlic paste, 2 chillies, 2 tsp lemon juice, 2 tsp oil, ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, 2 tbsp garam masala and 1 tsp salt.
- Whisk and mix well making sure everything is well combined.
- Add 2 potatoes, 5 beans, 1 carrot, 3 tablespoons of peas, 10 mushrooms, 3 tablespoons of mint and 3 tablespoons of cilantro.
- Mix well making sure everything is well combined. Cover and let marinate for 30 minutes.
How to make biryani base:
- First, in a large kadai, heat 2 tbsp ghee and 2 tbsp oil.
- Add 1 onion and fry until golden.
- Add 1 bell pepper and fry until crispy.
- Also, add the prepared marinade mix and mix well.
- Cover and cook for 10 minutes or until vegetables are almost cooked. Set aside.
How to cook rice for biryani:
- First, rinse and soak 2 cups of basmati rice for 30 minutes.
- Now in a large vessel take enough water and add mixed spices, 3 chillies, 2 tbsp coriander, 2 tbsp salt, 2 tsp lemon juice and 1 tsp ghee.
- Boil for 5 minutes or until water becomes flavorful.
- Now add the soaked basmati rice and mix gently.
- Boil for 5 minutes or until rice is 80% cooked.
- Then drain the rice and it is ready to be layered into the biryani.
How to prepare layered dum biryani:
- First, spread the biryani gravy base over the kadai. Top it with fried onions, coriander and mint.
- Top with cooked rice and level evenly.
- It is also topped with fried onions, cilantro and mint.
- Pour ½ cup saffron milk, 1 teaspoon biryani masala and 2 teaspoons ghee.
- Cover and seal with aluminum foil.
- Simmer for 20 minutes or until the rice is cooked through. Make sure to let it rest for at least 30 minutes before serving the vegetable biryani.
- Lastly, enjoy the Veg Dum Biryani with salad and raita.
